Long-aged pecorino cheese refined in a cave in the mountain village of Metello. After a short maturation in the dairy, it is transferred to Metello, where our maturation cellar is located. Once the maturation is complete, in completely natural conditions, the pecorino is covered with chestnut peels, which in addition to characterizing the crust, recall the aromas and flavors of the chestnut groves.
